This is the undiluted sake of "Choryo Honnjozo Yoshino-ceder-barrel 1992," which is also well-known for being served aged and warm.
By comparing the two, you can feel the difference between barrel-aged and unaged varieties.
It has been carefully stored at approximately 15°C in the underground air-conditioned storage facility at Choryu Shuzo Yao Head Office since 1992. In order to retain the flavor of aging, the sake is bottled as is without adding water.

Nobuhiro Ueno
(Juku to Kan Bar Master / Permanent Director of the Toki Sake Association)The top is nutty, with aromas of dried apricot, fig, and mushroom.
The first thing you notice when you put it in your mouth is a pleasant acidity. After that acidity is felt on the tip of your tongue, the aroma of dried fruit is layered and conveyed to you as a taste.
It leaves a moderate bitterness and a lingering sourness after it goes down your throat.
When eaten with oily Chinese cuisine, it provides a balanced and delicious meal.
It has a relatively crisp finish and is easy to drink, so when enjoyed with a meal it cleanses the mouth and makes the meal more delicious and enjoyable.
If you are having it after a meal, it is recommended to pair it with something sweet and rich, such as chocolate.
